This is one of our favorite quick and easy recipes, and is easily made vegan!

Ingredients
Lettuce Wraps
- 1 lb. ground turkey, or meat alternative, or mushrooms
- 1 onion, diced
- 1 bell pepper, diced
- 1/2 c. carrots, chopped
- 1 head of Bibb or romaine lettuce (romaine will be a bit more bitter)
- 1 cup water chestnuts, sliced (optional)
- 1 tsp Sriracha or chili garlic sauce
- 1 tbsp ginger paste
- 1 tbsp soy sauce
- 2 tbsp hoison
- 1 tbsp teriyaki sauce
- 1 tsp sesame oil + 1 tbsp if vegan
Peanut Sauce
- 1/2 c. crunchy peanut butter (we like a brand that is just peanuts)
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 2 tbsp brown sugar
- 2 tsp chili garlic sauce
- 1 tbsp lime juice
- 3 garlic gloves, minced
- 1 tbsp ginger paste
- 1/2 tsp Sriracha (or to taste)
- 2-4 tbsp water

- small mixing bowl
- medium mixing bowl
- heavy whisk
- high walled frying pan
- silicone spatula
- mason jar or other air tight storage jar (for leftover sauce)
- measuring spoons and cups
- chef’s knife
- cutting board

Directions
- If using a food processor, combine all the sauce ingredients together and pulse until smooth. Transfer to a mason jar or other air tight container. If not using a food processor, combine all the sauce ingredients into the medium mixing bowl and whisk until smooth, adding water as needed to achieve the correct consistency,
- In the small mixing bowl, combine the sauce for the lettuce wraps and whisk until smooth.
- Brown the meat or meat substitute if using, then add the veggies (or start here if using mushrooms) and sauté for about 5 minutes. If making vegan, start with 1 tbsp sesame oil in the pan, then add the veggies to sauté.
- Add the sauce and simmer uncovered for 5 minutes.
- Serve with lettuce rinsed and separated and top with peanut sauce.
